Eggless Chocolate Mousse: Chocolate Mousse Without Gelatin Or Agar Agar

Eggless Chocolate Mousse: Chocolate Mousse Without Gelatin Or Agar Agar

The story about my chocolate mousse goes back to more than a decade ago. Back then, one could not find good western desserts without eggs or gelatin.

And my husband and I, being strict vegetarians, would be so disappointed after a nice meal when we could not have most of the desserts on offer.

Around this time, I visited the kitchen of the Taj Land’s End in Bandra. That’s when I made acquaintance with chef Ravi Verma who was known to make the best blueberry cheesecake.

But, as luck would have it, his blueberry cheesecake had gelatin in it and when I told him that I could not eat it, he whipped up a chocolate mousse for me with just 3 ingredients- cream, chocolate and a little bit of yogurt.

My chocolate mousse recipe is based on Chef Verma’s recipe and has very few ingredients too.

I know that many of you don’t try a recipe which has agar agar or china grass for many reasons. Some of you find it difficult to locate, some of you find it difficult to deal with and others are not comfortable using an unfamiliar ingredient.

This recipe is perfect for those of you who fit into any of the above categories. And even if you are prolific in dessert making, you must give this a try as this is super easy to make and tastes great.

This chocolate mousse is perfect in taste and texture.

My little Hari loved it too.

If you have to cook for a large crowd or if you have too many elaborate dishes to make for main course, this recipe will come to your rescue. You could also make it and refrigerate it the day before you intend to serve.

This chocolate mousse recipe will be perfect for any occasion or celebration and in my humble opinion would fit into any menu across the world, for the simple reason that most people love chocolate.

Play around with your garnishes by embellishing the mousse with berries, cherries, more chocolate in terms of chocolate shavings or chocolate curls or a simple dusting of cocoa powder and you will have a stunning looking dessert that is sure to be a crowd pleaser.

Fill the mousse in cups or glasses for a variation. Use seasonal fruits for garnish.

400 gms (2 ½ cups) chocolate
200ml (or a little less than a cup) water
400ml (2 ½ cups) whipping cream*
100gm ( ½ cup) yogurt
a few drops of vanilla extract
cherries, berries, chocolate curls, mint leaves for garnishing

If your chocolate is in blocks then chop your chocolate into small pieces.

Place the chocolate on a double boiler, pour in the water and stir with a spatula or a whisk until the chocolate melts and turns smooth.
After the chocolate melts completely, take it off the heat and allow to cool completely.

In a chilled bowl, whip the cream until you get soft peaks.
Whisk the yogurt until smooth and mix the smooth yogurt into the whipped cream.

Add a few drops of vanilla extract and the melted chocolate and mix well.

Place the mousse in a piping bag and pipe the mixture into individual bowls. You can also spoon the mixture into one large bowl.
Garnish with cherries, berries, chocolate and mint leaves.

*I used whipping cream which was already sweetened, so I havent added sugar. If you are using cream without sugar, then you have to add sugar. You can add about 6 tbsp of powdered sugar or add it according to your taste.

Serves 6 to 8
