Quick And Easy No Bake Strawberry Cheesecake In A Glass

Quick And Easy No Bake Strawberry Cheesecake In A Glass

Recipe-A series of step by step instructions for preparing ingredients you forgot to buy, in utensils you don't own, to make a dish the dog wouldn't eat- Anonymous

I happened to read the above quote one morning and it so happened that I came up with a recipe that connected to this quote, later on in the day.

Everybody loves cheesecakes. But, making cheesecakes involves the use of certain ingredients, techniques and equipment, without which one cannot get a perfectly set cheesecake.

This cheesecake in a jar is the cheesecake that everyone loves, but made without the hassles of complicated ingredients, techniques and cooking methods.

All you need are a few ingredients, a blender and a glass, stuff which most kitchens in the world would have. And yes, you don’t need a springform pan or a cheesecake ring to make this dessert.

The one big disconnect to the quote above and this dish is that this is something that even the Gods would eat! Forget about the Dogs!

I love using Philly cream cheese occasionally to make gorgeous cheesecakes, but since “eat local, think global” is one of the mottos in my cooking life, I use it as sparingly as possible.

And I’m yet to come across good local cream cheese without any preservatives and chemicals in it. So, like I said in my previous post I end up using paneer in a lot of dishes.

But, let me tell you, this cheesecake in a glass is not lacking in any form. Infact, it is surprisingly spectacular!

When I put a spoonful in my mouth, I did not imagine that it would taste so good. It had the perfect balance of a clean taste, a smooth and creamy texture and wonderful bursts of flavour!

Strawberries are in full season here and this is one of the best ways you could use strawberries. Children love colourful stuff and Hari liked eating this by putting his favourite mocktail umbrella in his glass.

What’s more? This is so quick and easy and is one of those desserts that would never fail to impress your loved ones or your guests. And it looks so beautiful that it will seem that hours of effort have gone into its making, whereas the truth is otherwise.

And this secret could stay between me and you!

Make sure you use very soft and creamy paneer to make this dish. You can also substitute the paneer with the cream cheese.

Ingredients:

250 gm or 10 to 12 strawberries, hulled

250 gm (1 cup) soft paneer, grated

200 ml (3/4 cup) cream

65 gm (1/2 cup) powdered sugar

½ tsp pure vanilla extract

Method:

To begin with, clean and hull the strawberries. Grate the paneer.

In a blender or a food processor, put in the hulled strawberries, the grated paneer, the cream, the powdered sugar and the vanilla extract and blend till smooth.

Pour the mixture in glasses and chill in the refrigerator for a couple of hours.

Garnish with strawberries and serve.
